Ingredients (Makes 6 tacos)

For the Hash

  • 2 medium sweet potatoes, shredded and squeezed dry (fiber + beta-carotene for glowing skin)

  • ½ cup fresh tomato salsa (hydrating + packed with lycopene)
  • Extra sprouts, for garnish

Instructions

1. Cook the Hash

Heat a large nonstick pan over medium heat and add avocado oil. Spread the shredded sweet potatoes evenly in the pan and let them crisp up for 4–5 minutes without stirring. Flip, then add the sprouts and season with smoked paprika, cumin, garlic powder, salt, and pepper. Cook for another 2–3 minutes, stirring occasionally, until everything is golden and caramelized.

2. Make the Smoky Yogurt Sauce

In a small bowl, mix Greek yogurt, adobo sauce, lime juice, and honey. Season with salt. The result? A creamy, smoky, slightly tangy sauce that balances the crispy hash perfectly.

3. Warm the Tortillas

Heat a dry skillet over medium heat and warm each tortilla for 30 seconds per side until soft and pliable.
