Bright, peppery, and protein-packed, this salad is a celebration of fresh vegetables, creamy chickpeas, and microgreens. A dish that screams flavor, crunch, and nutrition – no fluff, just real food done right.


🥗 Ingredients (Serves 2–3):

  • 1 can chickpeas (garbanzo beans) – drained and rinsed
  • 1/2 cup baby carrots – thinly sliced
  • 4–5 cherry tomatoes – halved
  • 1/4 cup radishes – thinly sliced
  • 1/4 small beet – finely shaved
  • 1/4 cup parmesan flakes or shavings
  • 1/2 cup mixed microgreens (sunflower sprouts, arugula, beetroot microgreens, etc.)
  • 1 tbsp pink peppercorns or freshly cracked black pepper
  • 1 tbsp extra virgin olive oil
  • 1/2 tbsp lemon juice
  • 1/2 tsp sea salt
  • Optional: balsamic glaze for drizzle

Method:

1. Get your chickpeas ready.
Drain, rinse, and pat them dry with a towel. Don’t mess around with soggy beans – they need to hold their own.

2. Toss your veggie like you mean it.
Into a large mixing bowl, throw in your chickpeas, sliced carrots, radishes, cherry tomatoes, and shaved beet. Add a pinch of sea salt. Give it a good toss.

3. Microgreens go in last.
These are delicate, so fold them in gently. Don’t smash them – they’re the soul of the salad.

4. Dress it properly.
Drizzle olive oil and fresh lemon juice. Toss again with your hands – not a spoon – to keep things light and airy.
