🌿 Golden, crispy fritters made with fresh microgreens, chickpea flour, and Parmesan, stacked high and served with a creamy lemon-garlic yogurt dip.

Ingredients (Serves 2-3)

For the Fritters:
  • 2 cups fresh microgreens (broccoli, radish, pea shoots, or a mix)
  • ½ cup chickpea flour (or all-purpose flour)
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon baking powder (for extra fluffiness)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • ¼ cup cold sparkling water (or regular water)
  • Olive oil, for frying
For the Lemon-Garlic Yogurt Dip:
  • ½ cup Greek yogurt
  • 1 clove garlic, finely minced
  • Zest of ½ lemon
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

Step 1: Make the Yogurt Dip

  1. In a small bowl, mix Greek yogurt, minced garlic, lemon zest, lemon juice, olive oil, salt, and black pepper.
  2. Stir until smooth and creamy. Cover and refrigerate while preparing the fritters.

Step 2: Prepare the Fritter Batter

  1. Roughly chop the microgreens and place them in a mixing bowl.
  2. Add chickpea flour, Parmesan, baking powder, garlic powder, onion powder, smoked paprika, red pepper flakes, salt, and black pepper. Toss to coat the microgreens.
  3. Crack in the egg, then pour in cold sparkling water and gently mix until a thick batter forms. (It should hold together but not be runny.)

Step 3: Fry the Fritters

  1. Heat 2 tablespoons olive oil in a skillet over medium heat.
  2. Scoop small mounds of batter (about 2 tablespoons each) into the pan, flattening slightly.
  3. Fry for 2-3 minutes per side until golden brown and crispy.
  4. Transfer to a paper towel-lined plate and repeat with remaining batter.

Step 4: Stack & Serve

  1. Stack the fritters high on a serving plate.
  2. Drizzle with extra olive oil and a pinch of Parmesan.
  3. Serve hot with the lemon-garlic yogurt dip on the side.
