Ingredients (Serves 2-3)
For the Fritters:

For the Lemon-Garlic Yogurt Dip:
- ½ cup Greek yogurt
- 1 clove garlic, finely minced
- Zest of ½ lemon
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- Salt and black pepper, to taste

Step 1: Make the Yogurt Dip
- In a small bowl, mix Greek yogurt, minced garlic, lemon zest, lemon juice, olive oil, salt, and black pepper.
- Stir until smooth and creamy. Cover and refrigerate while preparing the fritters.
Step 2: Prepare the Fritter Batter
- Roughly chop the microgreens and place them in a mixing bowl.
- Add chickpea flour, Parmesan, baking powder, garlic powder, onion powder, smoked paprika, red pepper flakes, salt, and black pepper. Toss to coat the microgreens.
- Crack in the egg, then pour in cold sparkling water and gently mix until a thick batter forms. (It should hold together but not be runny.)
Step 3: Fry the Fritters
- Heat 2 tablespoons olive oil in a skillet over medium heat.
- Scoop small mounds of batter (about 2 tablespoons each) into the pan, flattening slightly.
- Fry for 2-3 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate and repeat with remaining batter.

- Stack the fritters high on a serving plate.
