🍳 Egg Yolk Pearls (Optional but Stunning)

For this, you'll need syringe/dropper, ice-cold oil, and a water bath. Or use a squeeze bottle.

  • 2 egg yolks
  • 1 tsp water
  • Pinch of salt
  • Drop yolk mixture into cold neutral oil using a dropper or squeeze bottle — the pearls form instantly. Strain & rinse.

How to Build This Masterpiece:

1. Prep the Tartare Base

– Finely dice the beef using a sharp knife, not a grinder.
– Mix gently with mustard, capers, shallots, olive oil, seasoning.
