Ingredients
- 1 small handful of pea shoots microgreens
- 1/2 avocado, sliced
- 1/2 cup roasted chickpeas (seasoned with sea salt + smoked paprika)
- 1 hard-boiled egg, halved
- 5-6 cherry tomatoes, halved
- 1/4 cup pomegranate seeds
- 1/4 cup diced fresh zucchini
- 1 tbsp dried cranberries
- 1/4 cup caramelized onions or roasted mushrooms (optional as seen in image)
- Fresh baby spinach or kale as a base
🥗 Simple Zesty Dressing
- 1 tbsp extra virgin olive oil
- 1 tsp lemon juice
- Pinch of flaky sea salt
- Cracked black pepper
Method
