Veggie Couscous Lunch with Creamy Hummus Dip
This isn’t your average salad. It’s a high-protein, plant-packed lunch bowl built to fuel your body clean. Fresh spiralized veggies, crunchy cabbage, fluffy couscous, silky hummus, and crisp sprouts. Ingredients
For the Bowl:
- 1 cup couscous
- 1 large carrot (spiralized or thinly shredded)
- 1 zucchini (spiralized or thinly sliced)
- ½ small purple cabbage (thinly sliced)
- 1 small handful alfalfa or broccoli sprouts
- 1 cup arugula (rocket)
- 2 tbsp pumpkin seeds (pepitas)
For the Hummus Dip:
- 1 cup hummus (store-bought or homemade)
- 1 tbsp extra virgin olive oil (plus extra for drizzling)
- Pinch of smoked paprika (optional)
For Dressing (Optional):
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Sea salt & cracked pepper to taste
METHOD:
1. Cook the Couscous Properly:
Boil water (use a 1:1 ratio with couscous). Once boiling, remove from heat, stir in couscous, cover, and let it steam for 5 minutes. Fluff with a fork. Add a small drizzle of olive oil and season with sea salt—don't serve bland couscous, ever.
2. Prep Those Veggies Like a Pro:
Get your carrots and zucchini spiralized—no spiralizer? Fine. Slice thinly. Slice cabbage into fine ribbons. Keep it raw, fresh, and crunchy. Wash and dry your arugula and sprouts.
3. Plate with Purpose:
In a wide bowl, lay the couscous to one side. Arrange carrots, zucchini, purple cabbage, arugula, and sprouts separately around the bowl. Keep it clean. Keep it structured. Drop a generous swirl of hummus in a ramekin or directly in the bowl.
4. Finish Strong:
