  • 1 tbsp tahini
  • Juice of 1 lemon
  • Salt & pepper to taste
  • Olive oil (another glug)

Toppings (use what’s fresh, what’s vibrant):

  • Sliced cucumber
  • Cherry tomatoes, halved
  • Radishes, thinly sliced
  • Corn kernels (grilled or steamed)
  • Carrot coins
  • Microgreens
  • Basil leaves (optional)

1. Prep Your Hummus (2 ways):

  • Throw all beetroot hummus ingredients into a food processor. Blitz until smooth and creamy. Add more oil or water if too thick.
